Follow the smoke in any Indonesian night market and it leads to a satay cart: a narrow trough of coconut-shell charcoal, a vendor fanning it with a woven paddle, and dozens of skewers picking up char in a haze that seasons the whole street. Sate ayam — chicken satay — is the one that traveled, carried by Madurese vendors across Java and then by traders through Malaysia, Singapore, and Thailand until half a continent claimed a version. Indonesia's, lacquered with sweet soy and buried in peanut sauce, remains the reference.

We'll say it plainly: no air fryer reproduces charcoal. The smoke, the flame-licked blistering, the vendor's fan — that's the soul of street satay, and moving hot air doesn't have it. What the air fryer does deliver is everything else: thin ribbons of thigh meat with genuinely caramelized edges (the coconut sugar in the marinade is doing that work), cooked through in ten minutes, no grill to light and no skewers snapping over a gas burner. Judged as a weeknight dish rather than a pilgrimage, it holds up.

Two notes on keeping this gluten-free honestly. Kecap manis, the sweet soy syrup in many Indonesian marinades, is usually brewed with wheat — so we build the same sweet-salty register from tamari and coconut sugar instead. And if you finish with sambal or chili crisp, read the jar: some excellent ones contain shrimp paste, which matters if shellfish is on your watch list. The peanut sauce itself is the non-negotiable — real peanut butter loosened with coconut milk, tamari, and lime, warmed until it barely holds a ribbon.

Serve with cucumber and chunks of raw shallot, the traditional cooling counterpoint, and rice or lontong if you're making it dinner. A quick-read thermometer keeps thin strips from tipping over into dry.

Method

    Whisk 2 tablespoons of the tamari with the coconut sugar, turmeric, coriander, cumin, garlic, shallot, and lemongrass. Toss with the chicken strips and marinate at least 1 hour, up to overnight.

    Thread the chicken onto soaked, trimmed skewers in a tight ribbon — thin and flat, not bunched, so the edges can catch and caramelize.

    Air fry at 390°F in a single layer, 9–10 minutes, flipping once, until the edges are browned and a thermometer reads 165°F. Work in two batches rather than stacking.

    Meanwhile, warm the peanut butter, coconut milk, remaining tablespoon of tamari, lime juice, and chili (if using) in a small pan, whisking until it thickens to a pourable sauce. Loosen with water as needed.

    Pile the skewers on a platter with the peanut sauce, lime wedges, and something cooling — cucumber chunks and raw shallot are traditional and correct.
