Every kids' menu in America ends at the same place: chicken tenders. The dish gets treated as a culinary surrender, and that's exactly backwards — a properly made tender, juicy inside a genuinely crisp crust, is fried chicken distilled to its most democratic form. The problem was never the dish. The problem is that most tenders come off a freezer truck, engineered for shelf life instead of dinner.
Made from actual chicken, the air fryer does this beautifully — with one trick it cannot do alone. Moving air cooks a tenderloin through in ten minutes, but it will not brown raw panko in that window; you end up with pale, sandy breading on perfectly cooked chicken. So we toast the crumbs first, four minutes in a skillet, and bread with crumbs that are already golden. The air fryer then just has to crisp and cook, which is the part it's good at.
The other habits that matter: dry chicken before the flour (wet surfaces make the coating slide off in sheets), a firm press at the panko stage so the crust survives the flip, and 165°F on a fast thermometer instead of cutting one open to check. Cut tenders bleed steam and dry out; probed tenders stay juicy.
These hold their crunch for a solid twenty minutes, which no drive-through bag has ever managed. Double the batch — the cold ones are tomorrow's lunchbox win.

Ingredients
- 1½ lbchicken tenderloins — or breasts cut into strips
- ½ cupall-purpose flour
- 2eggs — beaten with 1 tbsp water
- 2 cupspanko breadcrumbs
- 2 tbspneutral oil
- 1 tspfine sea salt
- 1 tspsmoked paprika
- ½ tspgarlic powder
- ½ tspblack pepper
Method

Toast the panko with the oil in a dry skillet over medium heat, stirring, 3–4 minutes until golden. Air fryers cook breading through before they brown it — pre-toasting is the difference between golden and gray. Stir in the salt, paprika, garlic powder, and pepper.

Set up the line: flour in one dish, beaten egg in the second, seasoned toasted panko in the third. Pat the tenders very dry, then flour (thin coat), egg (drip it off), panko (press it on firmly with your palm).
