- 1 tbspolive oil — extra-virgin
- 1/2 tspfine sea salt
- 2 clovesgarlic — minced
- —flaky salt — a pinch at the end, to taste
Method

Wash the beans early and dry them completely — spread on a towel while you do everything else. Water on the skins is the difference between blistered and boiled.

Toss the beans with the olive oil and fine salt until they gleam. Hold the garlic back for now; it burns before the beans blister.

Pile them into the basket — beans are forgiving of a little overlap because they shrink fast. Air fry at 390°F for 8 minutes, shaking hard once at 4 minutes.

Add the minced garlic, toss with tongs, and cook another 3–4 minutes until the beans are wrinkled, blistered brown in spots, and tender with a little chew.

Finish with flaky salt and eat them hot — with fingers, off the counter, before dinner if necessary. That is how most of ours have gone.
