The genius of the banana, for anyone who bakes for children, is that it does two jobs at once: it sweetens and it binds. A couple of bananas gone soft and freckled on the counter — the ones nobody wants to eat out of hand anymore — are exactly what you need. This is peasant thrift dressed up as breakfast, the same instinct that gave us banana bread, just shrunk down to a size a toddler can hold in one fist and a parent can stash in a lunchbox.

I won't oversell these as cake, because they aren't. With no flour, no butter, and barely any added sugar, they're closer to a baked oatmeal you can pick up — dense, moist, gently sweet, honestly wholesome. The air fryer suits them well: it sets the little muffins fast and gives the tops a faint golden lift. The one rule worth repeating, since the whole batch hinges on it, is to use certified gluten-free oats if gluten is a concern — plain oats are naturally wheat-free but are very often cross-contaminated in processing, and the label is the only way to know.

Method

    Mash the bananas smooth in a bowl, then whisk in the eggs, maple syrup if using, vanilla, and salt. Ripe, spotty bananas are doing most of the sweetening here, so don't skimp on how ripe they are.

    Blitz the certified gluten-free oats into a coarse flour (a blender or food processor works) and stir them in with the baking powder and cinnamon. Let the batter sit 5 minutes to thicken.

    Spoon into silicone muffin cups, filling each about three-quarters full. Set them in the basket without touching.

    Air fry at 320°F for 14 minutes, until risen, set, and springy to the touch and a pick comes out clean. The lower temperature keeps the tops from scorching before the centers cook.

    Cool in the cups for 5 minutes before turning out — they're fragile while hot and firm up as they rest.
