The one rule worth repeating, since the whole batch hinges on it, is to use certified gluten-free oats if gluten is a concern — plain oats are naturally wheat-free but are very often cross-contaminated in processing, and the label is the only way to know.

Mash the bananas smooth in a bowl, then whisk in the eggs, maple syrup if using, vanilla, and salt. Ripe, spotty bananas are doing most of the sweetening here, so don't skimp on how ripe they are.

Blitz the certified gluten-free oats into a coarse flour (a blender or food processor works) and stir them in with the baking powder and cinnamon. Let the batter sit 5 minutes to thicken.

Spoon into silicone muffin cups, filling each about three-quarters full. Set them in the basket without touching.

Air fry at 320°F for 14 minutes, until risen, set, and springy to the touch and a pick comes out clean. The lower temperature keeps the tops from scorching before the centers cook.
