The frittata is Italy's standing rebuke to the French omelette: no folding, no fussing, no judgment about the state of your wrist technique. It's egg cookery for people with other things to do — which historically meant Italian farm cooks stretching six eggs and whatever the garden gave them into lunch for the family. The whole genre is forgiving by design. So it's a little absurd how many home cooks still get burned by the classic stovetop-to-broiler handoff: skillet too hot, bottom leathery, top raw, and a hot cast-iron handle waiting for the hand that forgets.
The air fryer version deletes all of that. You bake the frittata in a 7-inch cake pan set inside the basket — the cake-pan method — and the circulating heat cooks it gently from all sides, more like a water-bathless custard than a fried egg dish. No flip, no broiler, no leathery bottom. The honest limits: a 7-inch pan means a six-egg frittata that feeds four politely or two seriously, and you won't get the dramatic cast-iron puff of a 425°F oven. What you get instead is an evenly set, tender frittata that slides out clean, from a machine you didn't have to preheat.
The one genuinely load-bearing step is pre-cooking the mushrooms. Eggs forgive nearly everything except water, and raw mushrooms are ninety percent water with ambitions. Five minutes in the pan first, and your frittata sets creamy instead of weeping. Leftover wedges keep four days in the fridge and reheat in the basket at 300°F for three minutes — which makes this less a recipe than a weekly meal-prep habit with a crackly cheese top.

Ingredients

- ½ cupcherry tomatoes — halved
- 2scallions — sliced, whites and greens separated

Method

Air fry the mushrooms and scallion whites with a pinch of salt in the greased 7-inch cake pan at 350°F for 5 minutes to drive off their water. Raw mushrooms weep into eggs and make a wet frittata — this little head start is the difference.

Whisk the eggs, milk, salt, and pepper until fully blended, then stir in the cheese.

Pour the custard over the mushrooms in the pan, scatter the tomato halves cut-side up, and lower the heat to 320°F.

Air fry for 15 minutes, until puffed at the edges, just set in the center, and golden on top. It should barely wobble when nudged — air fryers run hot from above, so check at 11 minutes and tent with foil if the top browns before the middle sets.
