In Spain, croquetas are how you judge a bar — and a grandmother, though only one of those judgments is safe to say out loud. They began as cocina de aprovechamiento, thrift cooking: the end of a serrano ham, a handful of flour, milk, and enough technique to turn scraps into something people line up for. The croqueta's genius is the contrast — a shell that crunches, and an interior that isn't so much filling as a warm, ham-perfumed cream that barely holds its shape. That texture took Spain generations to perfect, and it's why bad croquetas (stodgy, floury, sad) are a small national tragedy.
Let's be straight about what an air fryer can and can't do here. It cannot give you the absolutely seamless, evenly bronzed jacket of a proper 350°F olive oil bath — the underside where the croqueta sits will always be a shade quieter. What it can do, if you oil the crumb properly and double-bread, is deliver a genuinely crisp shell around that molten center without the single most stressful deep-fry in the home repertoire: croquetas are infamous for bursting in oil, and the air fryer's gentler, hands-off heat actually makes blowouts less likely. That's not spin. That's the honest scorecard, and it comes out in the machine's favor more often than Spanish purists would like to hear.
The non-negotiable is the chill. The béchamel must go into the fridge soft-set and come out sliceable — overnight is best. Cold filling, double crumb, oiled shell: follow those three rules and the rest is just waiting.

Melt the butter in a saucepan over medium heat, stir in the ham for a minute to render its flavor, then add the flour and cook, stirring, for 2 full minutes — undercooked flour is the enemy of good croquetas.

Spread into a dish, press plastic wrap onto the surface, and chill at least 4 hours, ideally overnight. This step is the recipe; skip it and you have soup.
