Egg bites became a national breakfast because a coffee chain figured out what French cooks have known forever: eggs cooked gently with dairy turn into custard, and custard travels better than scrambled eggs ever will. The café version is cooked sous vide, which is why it costs five dollars for two bites the size of golf balls. The home version needs a blender, a silicone mold, and an air fryer running at a polite 300°F — and the results are close enough that we stopped feeling smug about it and just started eating them.

The mold is the method here. A seven-cup silicone egg-bite mold (the kind sold for pressure cookers) drops straight into the Cosori's basket, and silicone's gentle, even heat transfer is what keeps the custard tender instead of rubbery. No mold? A few oiled ramekins work. What doesn't work is a metal muffin tin at high heat — that's how you get brown, spongy egg pucks, the exact thing this recipe exists to avoid.

Two texture rules. Blend, don't whisk: thirty seconds in the blender breaks the cottage cheese down completely and aerates the eggs, and that's where the signature velvet comes from — nobody will believe there's cottage cheese in these, which is useful intelligence if you're feeding someone who claims to hate it. And keep the temperature low: 300°F, not a degree more. Eggs are the most honest ingredient in the kitchen; overheat them and they'll tell everyone.

This is also one of the friendliest recipes we have for small kitchen helpers — cracking eggs badly into a blender is a consequence-free crime, since the blender destroys the evidence. Mix-ins are a fridge-cleanout democracy: swap the spinach and pepper for anything already cooked and chopped small. Just keep the total around a cup, or the custard loses the vote.

  • ½ cupcottage cheesefull-fat — this is the creaminess engine

  • ¼ tspfine sea salt
  • ¼ tspblack pepper

  • 1 tspolive oilfor greasing the silicone mold

Method

    Blend the eggs, cottage cheese, salt, and pepper for 20 to 30 seconds, until completely smooth and a little frothy. The blender is what gives you that custardy, no-curds texture — a whisk won't get you there.

    Lightly oil a 7-cup silicone egg-bite mold. Scatter the cheddar, spinach, and bell pepper into the cups, then pour the egg mixture over, filling each about three-quarters full — they puff.

    Set the mold in the basket (uncovered) and air fry at 300°F for 12 to 14 minutes, until the tops are set and just barely golden. A knife tip in the center of one should come out clean; centers should read 160°F.

    Rest 5 minutes — they'll deflate slightly and pull from the sides, which is exactly right — then flip the mold over a plate and squeeze each cup to pop them out.

    Eat warm, or cool completely and refrigerate up to 4 days. Reheat 20 to 30 seconds in the microwave; they take it better than almost any other egg dish.
