×4- 4 slicessandwich bread — sturdy white or sourdough — thin bread collapses
- 2 tbspbutter — softened, not melted
- 4 slicescheddar — or 3 tbsp shredded per sandwich; a mix of cheddar and low-moisture mozzarella pulls best
- 1 tspDijon mustard — optional, spread inside for the grown-up version

Butter one side of every slice of bread, edge to edge — bare corners burn instead of browning. Build the sandwiches butter-side out, cheese (and Dijon, if using) inside.

Air fry at 360°F for 4 minutes. The top element browns the upward face while the circulating air sets the bottom — this is why there's no sad pale side.

Flip with tongs — the sandwich will have set enough to hold together — and give it 3–4 more minutes, until both faces are deep golden and the cheese is visibly molten at the seams.

Rest one full minute before cutting. The interior is lava; the minute also lets the cheese set from liquid to stretchy, which is the pull you're after.
