Glazed carrots have an image problem: the church-supper version, boiled soft and drowned in something syrupy, taught two generations to push them around the plate. But the idea underneath is sound. Carrots are one of the sweetest things in the produce aisle, and a little honey plus real browning turns that sugar into something closer to candy with a vegetable's conscience. The failure was never the concept — it was the boiling.
The air fryer fixes it by running the operation in the right order. First, dry heat roasts the carrots hard, concentrating their own sugars and putting brown, slightly bitter edges on the coins — that's the flavor boiled carrots never get. Only then does the honey show up, with just three or four minutes left, long enough to bubble into a glaze and not long enough to scorch. Add the honey at the start, as most oven recipes do, and you're steam-cleaning burnt sugar off a basket at 9 p.m. We know because we tried it that way first.
Honesty about the honey: it's why this recipe is vegetarian rather than vegan, and it's still sugar — about a teaspoon per serving, which we consider a fair trade for a vegetable kids request by name. Maple syrup swaps in one-for-one if you want the vegan version; it makes a slightly thinner, darker glaze that's every bit as good.
This one earns its kids pillar twice over: they'll eat it, and they can help make it. The glaze-whisking and carrot-tossing jobs are genuinely useful and completely safe, which is a rarer combination in a kitchen than most recipes admit.

- ¼ tspground cinnamon — optional but kid-approved
- 1 tspfresh thyme leaves — or chopped parsley, to finish

Cut the carrots into thick diagonal coins, about 1/2 inch — even thickness matters more than shape. Toss them with the olive oil and salt only. No honey yet; sugar this early just burns.

Air fry at 380°F for 10 minutes, shaking the basket once at the 5-minute mark, until the edges are browning and a fork meets just a little resistance.

While they cook, whisk the honey with the cinnamon (if using) and a teaspoon of warm water so it pours thin.

Pull the basket, drizzle the honey mixture over the carrots, and toss with tongs until every coin is slicked. Air fry another 3–5 minutes until the glaze bubbles and the edges go glossy and caramel-brown. Watch the last 2 minutes — honey turns fast.
