Cut the carrots into thick diagonal coins, about 1/2 inch — even thickness matters more than shape. Toss them with the olive oil and salt only. No honey yet; sugar this early just burns.

Air fry at 380°F for 10 minutes, shaking the basket once at the 5-minute mark, until the edges are browning and a fork meets just a little resistance.

While they cook, whisk the honey with the cinnamon (if using) and a teaspoon of warm water so it pours thin.

Pull the basket, drizzle the honey mixture over the carrots, and toss with tongs until every coin is slicked. Air fry another 3–5 minutes until the glaze bubbles and the edges go glossy and caramel-brown. Watch the last 2 minutes — honey turns fast.
