In Japan, the satsumaimo — purple-skinned, with flesh that bakes to the color of pale gold — is winter itself. Yaki-imo vendors trundle through neighborhoods with stone-roasting carts, calling out as they go, and the slow heat does something alchemical: the potato's starches convert to sugar and the flesh turns dense, smooth, and chestnut-sweet, more dessert than vegetable. People have queued for these from carts and convenience stores for generations. It's whole food at its most persuasive — nothing added, nothing needed.
The honest tradeoff is patience. A real yaki-imo gets its deep caramelized sweetness from a long, gentle stone roast, and you can't fully shortcut that. But the air fryer comes closer than an oven does, and faster: the circulating heat dries and concentrates the flesh while wrinkling the skin, coaxing out that signature sweetness in about forty minutes flat. Leave the potatoes naked — no oil, no foil — and resist the urge to crank the heat. Low and slow is the whole secret, and the rest after cooking is where the magic finishes setting.

Scrub the potatoes well and dry them. Prick each a few times with a fork so steam can escape. Leave them whole and unoiled — the goal is a dry, concentrated roast.

Air fry at 375°F for 40 minutes, turning once halfway, until a knife slides through the thickest part with no resistance and the skin has wrinkled and tightened.

Rest 5 minutes — the inside keeps cooking and setting into that custardy texture. Split open lengthwise, fluff the flesh, and finish with a pinch of flaky salt if you like.
