Salmon might be the single best argument for owning an air fryer. A convection oven the size of a breadbox does exactly what a $40 restaurant kitchen does to a fillet: blasts the surface with dry heat so the edges caramelize before the center has time to overcook. No pan to deglaze, no fish smell clinging to the stove for two days, no oil spatter. Ten minutes, done.
The whole game is when you stop. Salmon goes from silken to sawdust in about ninety seconds, and the fillet keeps cooking after you pull it — carryover heat adds a solid 5 degrees while it rests. So we pull at 125–130°F in the thickest part for a medium fillet that lands around 135°F on the plate: opaque at the edges, blush-pink and just-set in the middle. We'll be straight with you: the USDA says 145°F for fish, and if that number matters to you — pregnancy, immune concerns, or you just like it firm — cook to it and this recipe still works. But 145 straight out of the basket means 150 on your fork, and that's a different, drier fish.
Thickness beats time, every time. A thin tail piece is done in 6 minutes; a fat center-cut king fillet might need 12. This is why we keep saying a fast instant-read thermometer is the best twenty dollars you'll spend on this hobby — it turns "is it done?" from a guess into a reading.
Skin-on matters more here than in a pan. The skin insulates the bottom of the fillet from the basket, bastes the flesh as its fat renders, and — left undisturbed at 400°F — crisps into something you'll stop giving to the dog. Don't flip it. There's no reason to, and every flip is a chance to leave half your dinner stuck to the grate.

Ingredients
- 4salmon fillets — 6 oz each, skin-on, about 1 inch thick
- 1 tbspolive oil
- 1 tspkosher salt
- ½ tspblack pepper — freshly ground
- 1 tspsmoked paprika
- ½ tspgarlic powder
- 1lemon — cut into wedges, to serve

Pat the fillets thoroughly dry and let them sit at room temperature for 10 minutes while you preheat the air fryer to 400°F. Cold-from-the-fridge fish cooks unevenly.

Rub the fillets all over with the olive oil, then season the flesh side with the salt, pepper, smoked paprika, and garlic powder.

Place the fillets skin-side down in the basket with space between them. Air fry at 400°F for 7 to 10 minutes — no flipping — until the surface is burnished and the fish flakes at the thick end.

Start checking at 7 minutes with an instant-read thermometer in the thickest part. Pull at 125–130°F for medium; carryover heat will climb another 5 degrees while it rests. (USDA's official number for fish is 145°F — cook to that if you prefer, but expect a firmer, drier fillet.)
