Air Fryer Shrimp

Shrimp is the shortest distance between "nothing's defrosted" and dinner, and the air fryer makes that distance shorter still. Eight minutes at 400°F does what a screaming-hot skillet does — opaque snap, edges just kissed with browning — without the oil mist settling over your stovetop or the smoke alarm weighing in. For a weeknight protein you can throw over rice, salad, or tacos, this is about as close to free as cooking gets.
Two things separate good air fryer shrimp from sad rubber commas. First: dryness. Shrimp come to you soaked — from the thawing bag, from the fishmonger's ice — and every drop of that water has to boil off before browning starts. In an 8-minute cook there's no time for that. Pat them dry like you mean it. Second: size. Buy 16/20s (that's shrimp-per-pound) or bigger. Smaller shrimp overcook in the time it takes the basket to get them golden, and no seasoning fixes overcooked shrimp.
The doneness tell is shape, not the clock. A raw shrimp is straight; a perfect shrimp curls into a relaxed C; an overcooked one clenches into a tight O, tail touching head. Pull the basket the moment you see Cs. They'll finish tightening slightly in the residual heat while you find the lemon.
One honest note: this is not fried shrimp. There's no crust, no crunch — that's a battered dish that costs you gluten and egg and a mess. This is clean, garlicky, blistered shrimp, done before your rice cooker beeps, and it needs nothing but that lemon squeezed over the top while everything's still too hot to politely eat.

Ingredients
- 1½ lblarge shrimp — 16/20 count, peeled and deveined, tails on or off
- 1½ tbspolive oil

Pat the shrimp very dry with paper towels — wet shrimp steam instead of brown. Toss them in a bowl with the olive oil, garlic, smoked paprika, salt, pepper flakes, and black pepper until evenly coated.

Preheat the air fryer to 400°F for 3 minutes. A hot basket is what gets you color in a cook this short.

Spread the shrimp in a single layer — work in two batches rather than piling them up. Air fry at 400°F for 6 to 8 minutes, shaking the basket once at the halfway mark.

They're done when opaque all the way through, pink outside, and curled into a loose C. A tight O means you've gone a minute too far. (If you're a thermometer person, 120°F internal.)

Tip into a bowl, squeeze half the lemon over while they're hot, and shower with parsley. Serve with the remaining wedges.
