A samosa is a small lesson in how food moves. The form arrived in South Asia centuries ago along the trade and conquest routes out of Central Asia and the Middle East — there are versions of the stuffed, fried triangle from the Mediterranean to the Horn of Africa — but it was on the subcontinent that it settled into the thing most of us picture: a thin, blistered shell around spiced potato and peas, sold from a cart, handed over in newspaper, eaten scalding with a cup of chai. It is street food, wedding food, and rainy-day food all at once.

The deep fryer is what gives a classic samosa its bubbled, shattering crust, and the air fryer will not fully match that — this is the honest tradeoff. What you get instead is a genuinely crisp, evenly golden shell with a fraction of the oil, which means you can actually eat three without regret and the kitchen doesn't smell like a chip shop for two days. Brush them well; a dry wrapper stays pale and tough.

The filling here is naturally vegan and the only allergen in play is the wheat in the pastry — so this is an easy crowd-pleaser to put out at a party, and a genuinely good job to hand a kid, who will be better at the folding than you expect.

Give them room in a basket that won't crowd them — packed samosas steam at the seams instead of crisping.

  • 12 sheetssamosa pastry or spring roll wrapperscontains wheat
  • 3 mediumpotatoesboiled, peeled, roughly mashed
  • 1 cupgreen peasfresh or frozen
  • 1 tbspneutral oilplus more to brush
  • 1 tspcumin seeds
  • 1 tbspfresh gingergrated
  • 1green chiliminced; omit for kids
  • 1 tspgaram masala
  • 1 tspground coriander
  • 1/2 tspground turmeric
  • 1 tspfine sea salt
  • 2 tbspcilantrochopped

Method

  1. 01

    Warm the oil and crackle the cumin seeds, then add ginger and chili for thirty seconds. Stir in the mashed potato, peas, garam masala, coriander, turmeric, and salt and cook two minutes until fragrant. Fold in cilantro and let the filling cool fully — hot filling tears the pastry.

    Fold each pastry strip into a cone, spoon in the filling, and seal the edges with a dab of flour-and-water paste. Brush the finished samosas all over with a thin film of oil.

    Arrange in a single layer with space between them and air fry at 370°F for 16 minutes, flipping halfway, until evenly golden and crisp.

    Rest a couple of minutes — they crisp further as they cool slightly — and serve with tamarind or mint chutney.
