The hand pie is the oldest good idea in pastry: pie you can hold, invented everywhere dough met fruit — Cornish pasties, Latin American empanadas de manzana, the fried pies of the American South that gas stations have been quietly perfecting for decades. The apple version is the American classic, and it happens to be the pie format the air fryer does best.

Here's why: a full pie's problem is the soggy bottom, and the air fryer's whole personality is attacking food with hot moving air from every side. A hand pie, lifted on a perforated liner, browns underneath as well as on top — no blind baking, no oven preheat, no slab of pale dough at the base. Twelve minutes and the pastry shatters.

The craft is all in the seal. Cool your filling completely (patience here beats every other technique in the recipe), press the air out before crimping, and crimp like you mean it — the fork marks aren't rustic decoration, they're a gasket. Cut real vents. Every failure mode of a hand pie is a pressure problem, and pressure always finds the weakest point; your job is to choose where that point is.

If you make your own all-butter dough, this is a fine place for it. But the refrigerated rounds exist for Tuesday desserts, and we're not going to pretend a warm, sugar-crusted hand pie made with them is anything other than a small domestic triumph.

  • 2applesfirm-tart like Granny Smith or Honeycrisp; peeled and diced small
  • 3 tbspbrown sugar
  • 1 tbspbutter
  • 1 tspground cinnamon
  • 1 tspcornstarchstirred with 1 tbsp water
  • 1 tsplemon juice
  • 1 boxrefrigerated pie crust2 rounds — or your own all-butter dough if it's a weekend
  • 1eggbeaten, for the wash
  • 2 tbspcoarse sugarfor the crackly top

Method

    Cook the diced apples, brown sugar, butter, cinnamon, and lemon juice in a saucepan over medium heat for 5 minutes, until just tender. Stir in the cornstarch slurry, cook 1 minute until glossy and thick, then cool completely — hot filling melts pastry before it ever cooks.

    Cut the pie crust into 6 rectangles (or rounds). Spoon 2 tablespoons of cooled filling onto one half of each, leaving a border. Fold over, press out the air, and crimp the edges firmly with a fork — a lazy crimp is how filling escapes and caramelizes onto the basket.

    Brush with egg wash, sprinkle with coarse sugar, and cut two small vents in each pie. Vents aren't decoration: sealed pies inflate and split at the seam instead of the vent.

    Air fry at 350°F on a perforated liner, 3 pies at a time, 10–12 minutes until deep golden. Air fryers run hot and small — check at 8 minutes the first time; every machine has an opinion.

    Cool at least 10 minutes. Molten apple filling is the hottest substance known to dessert; the wait is structural, not optional.
