That's twenty-four servings of temptation parked on the counter, going stale from corner to center while you chip away at it out of obligation. The brownie, more than almost any bake, wants to be eaten within hours of cooling — when the top still crackles and the middle still has that fudge-adjacent density. Which makes it the perfect argument for the air fryer: a 7-inch pan, six proper brownies, gone by tomorrow, no regrets and no preheated oven raising the kitchen five degrees in July.
Air fryer baking has real limits and brownies mostly dodge them. The small capacity that ruins a sheet cake is irrelevant here — small is the point. The aggressive top heat that scorches delicate bakes actually helps set that glossy crust, as long as you run low and slow at 300°F and aren't shy about tenting foil if the top races ahead. We tested this batch against the same batter baked in a conventional oven, and here's the honest scorecard: the air fryer version had a slightly thicker crust and a marginally denser band at the edges; the oven version was more uniform.
