The three-ingredient peanut butter cookie is one of American baking's honest miracles: no flour, no butter, no leavening — just peanut butter, sugar, and an egg holding hands. It's naturally gluten-free without trying to be, which is worth knowing on its own, and it happens to be built for the air fryer, where "bake a dozen cookies" is usually a fight against a small hot box.
Small is the point. A full oven asks you to preheat twenty minutes to bake one tray; the air fryer does six cookies from cold in eight minutes. This is the difference between "should we bake cookies?" being a project and being an answer. Batch two goes in while batch one is still too hot to eat, which is the correct amount of cookies for the correct amount of waiting.
Two warnings from the test kitchen. Use conventional creamy peanut butter — the shelf-stable emulsified kind. Natural peanut butter, noble as it is, separates under heat and your crosshatches dissolve into oily comets. And respect the five-minute rest: with no flour, the only structure these have is cooled, set peanut protein. Move them early and you'll eat the evidence with a spoon, which — to be fair — is not the worst outcome.
One label note: this recipe contains peanut and egg but is free of the other tracked allergens as written. If you're baking for a tree-nut allergy, check your peanut butter's label for shared-line warnings — many brands run both.

Ingredients
- 1 cuppeanut butter — conventional creamy — natural-style separates and spreads into puddles
- ¾ cupsugar — plus 2 tbsp for rolling
- 1large egg
- ½ tspvanilla extract — the unofficial fourth ingredient; skip for strict three
- ¼ tspflaky salt — to finish — peanut butter wants it

Stir the peanut butter, sugar, egg, and vanilla into a uniform dough. It will look too soft; five minutes in the fridge while you cut a liner fixes that.

Roll into 12 balls, tumble each in sugar, and space six on a perforated liner cut to fit the basket. Press the classic crosshatch with a fork — it's not decoration; these cookies don't spread on their own and need flattening to bake through.

Air fry at 325°F for 7–8 minutes until the edges are set and lightly bronzed. The centers will look one minute underdone — that's correct. Air fryer bakes carry over hard in a small chamber.

Rest the cookies on the liner for 5 full minutes before moving them — flourless dough sets as it cools, and an impatient spatula turns cookie into crumble. Salt while warm. Repeat with batch two.
