Air fryer bacon is one of those internet claims that turns out to be mostly true, so let's be precise about which part isn't. True: perfectly flat, evenly cooked strips with no spatter burns on your forearms and no greasy film on the stovetop, in about ten minutes. Also true, and less advertised: bacon is nearly half fat, that fat renders into a drawer sitting directly under a heating element, and past a certain temperature it smokes like a rendering plant. Anyone who tells you their air fryer bacon has never set off a smoke detector is either lying or cooking it floppy.
The fix costs you a quarter cup of water. Poured into the drawer beneath the basket, it keeps the collecting fat cooler than its smoke point for the length of the cook. This is the same physics as the water pan in a barbecue smoker, scaled down to breakfast. We also hold the temperature at 350°F rather than the 400°F some recipes push — hotter renders faster than the water can buffer, and the last two minutes of a 400°F cook is where the smoke show starts.
The other thing the basket fixes is the fundamental dishonesty of the skillet, where bacon fries unevenly in its own fat, cupping and curling so the middle steams while the edges burn. Suspended on the perforated basket with air moving on all sides, every strip cooks flat and to the same doneness. Strain and save what renders out — bacon fat is a cooking fat with a resume, and Saturday's eggs will thank you.

Pour the water into the bottom of the drawer, under the basket. It keeps the rendered fat below its smoke point so your kitchen doesn't turn into a diner at closing time. Do not skip this with thick-cut bacon.

Lay the slices flat in a single layer, edges touching but not stacked. Cut slices in half if your basket is round — folded bacon cooks unevenly at the bend.

Air fry at 350°F for 8-10 minutes for chewy-crisp, 10-12 for shattering. No flip needed; the air does both sides. Check at 8 minutes the first time — brands and cuts vary wildly.

Move the bacon to a paper-towel-lined plate with tongs the moment it's a shade lighter than you want; it keeps crisping for a minute off the heat.

Let the drawer cool, then pour the fat-and-water through a strainer if you want to keep the fat (you do). Chilled, the bacon fat lifts right off the water layer.
