Boneless skinless chicken breast is the most cooked and most abused cut in America. It has no skin to protect it, almost no fat to forgive you, and a shape that guarantees the thin end overcooks before the thick end is done. The air fryer doesn't fix any of that by itself — what it brings is speed and even, aggressive heat, which shortens the window in which things can go wrong. The fixing is on you, and it takes two moves: a quick salt brine and an honest rest.

The brine is fifteen minutes, not fifteen hours. Salt water works its way just under the surface, seasoning the meat and helping it hang onto moisture through the cook. It's the difference between chicken that tastes seasoned and chicken wearing a coat of spices over bland meat.     Stir the kosher salt into the cold water until dissolved and submerge the chicken. Fifteen minutes on the counter is enough — this is a quick brine, not an overnight project. Meanwhile, mix the paprika, garlic powder, onion powder, sea salt, and pepper.
