The vertical spit is one of the great engineering achievements in the history of dinner. The Ottomans turned meat sideways and stood it up; the Levant perfected the marinated, stacked, slowly-turning version called shawarma; Lebanese and Syrian migrants carried it to Mexico, where it became al pastor. Everywhere it landed, the formula held: heavily spiced meat, hours by the fire, shaved thin so every serving is half tender interior, half crisped edge.
An air fryer is not a spit, and this recipe doesn't pretend otherwise. No home method gives you that shave-to-order layering. What the air fryer does uncommonly well is the flavor and the edges: boneless thighs in a yogurt marinade loaded with cumin, smoked paprika, and a suspicion of cinnamon, blasted at 380°F until the tips char while the meat stays juicy. Sliced thin and tossed back through their own board juices, they land remarkably close to the real thing's pleasures — and several miles closer than a skillet ever gets you.
Two habits worth stealing from shawarma shops. First, thighs, always — breast meat dries out on the spit and it dries out in the basket, and no marinade can lawyer it out of that. Take thighs to 175°F, not 165°F; the extra collagen melt is the difference between good and "why is this so tender." Second, the sour counterpoint is structural, not garnish: pickled turnips if you can find them, dill pickles if you can't. Rich spiced meat needs the vinegar argument.
The plate is naturally gluten-free — the marinade, the sauce, the pickles. The flatbread on the side is where wheat walks in, so if you're feeding a celiac table, serve it over rice or salad and nobody's shortchanged. A fast thermometer makes the 175°F call instant.

Ingredients
- 2 lbchicken thighs — boneless, skinless
- ½ cupplain whole-milk yogurt — divided — half for the marinade, half for the sauce
- 3 tbsplemon juice — divided

Whisk half the yogurt with 2 tablespoons lemon juice, half the garlic, the olive oil, cumin, paprika, coriander, turmeric, cinnamon, cayenne, and salt. Coat the thighs and marinate at least 1 hour, up to 24 — the yogurt's acidity is what keeps spice-crusted thighs tender.

Shake off excess marinade and lay the thighs flat in the basket, slight overlap allowed — shawarma benefits from a little crowding as long as air can still move. Air fry at 380°F for 16–18 minutes, flipping once, until charred at the edges and 175°F at the thickest point (thighs are better past 165°F; the extra degrees melt the collagen).

While it cooks, stir the remaining yogurt, lemon juice, and garlic with a pinch of salt into a quick white sauce.

Rest the chicken 5 minutes, then slice it thin and toss the slices back through the juices on the board.
