The meatball that Americans call Italian barely exists in Italy — polpette there are small, often fried, and rarely drowned in red sauce. The softball-sized, parmesan-loaded version simmering in marinara is an immigrant invention, built in New York tenements where meat was suddenly affordable and abundance was the point. That browning is the argument for the machine. Pan-fried meatballs crust on two or three sides where they happen to touch the steel; oven-baked ones barely crust at all. Between the parmesan and a proper all-over crust, you're not missing the umami; it's already in the pan. This recipe declares what it actually contains — wheat, dairy, egg — and nothing rides in under the radar.

Simmer the cooked meatballs briefly in the sauce rather than cooking them in it from raw.   • ¾ cuppanko breadcrumbs
  • ⅓ cupwhole milk
  • 1large egg

Method

    Stir the panko and milk together in a large bowl and let it sit 5 minutes until pasty — this panade is what keeps the meatballs tender instead of bouncy. Beat in the egg.
