Puff puff is the sound of a Nigerian party warming up. Somewhere a relative is dropping spoonfuls of yeasted, nutmeg-scented batter into hot oil, where they bloom into golden spheres — crisp-skinned, cloud-soft inside, rolled in sugar and gone almost as fast as they're made. It's celebration food and everyday food at once, sold from roadside stalls and made by the dozen at home, with cousins all over West Africa: bofrot in Ghana, mikate in the Congo. Cheap ingredients, big joy.
Now the honest part, because puff puff is the kind of dish where air-frying has the most to prove. Deep frying is what gives puff puff its signature thin, crackly shell and its perfectly round shape — the dough floats and turns in the oil. The air fryer won't replicate that exactly; you'll get a slightly more matte, more bread-roll exterior and shapes that lean rustic. What you gain is real: a far lighter snack, a fraction of the oil, and no pot of bubbling fat to mind with kids underfoot. The inside — soft, sweet, yeasty — is still all there.
Brush the dough with oil and don't skip the rise; the yeast doing its slow work is what keeps these tender rather than dense.

Ingredients

- 1/4 cupsugar — plus more for dusting
- 2.25 tspinstant yeast — one packet
- 1/2 tspfine sea salt
- 1/4 tspground nutmeg — the traditional warm note
- 1 cupwarm water — plus a splash if needed
- 2 tspneutral oil — for brushing
Method

Whisk the flour, sugar, yeast, salt, and nutmeg. Pour in the warm water and stir into a thick, sticky batter — looser than bread dough, too soft to knead. Cover and let it rise somewhere warm for about 45 minutes, until doubled and bubbly.

Scoop heaped tablespoons of batter with oiled hands or a small ice-cream scoop and roll loosely into balls. Brush each one with oil — this is what stands in for the deep fry's golden crust.

Air fry at 350°F for 14 minutes, turning gently halfway, until puffed, golden, and cooked through (a skewer should come out clean). Work in batches so they have room to expand.

Roll the warm puff puff in sugar and eat straight away, while the insides are still pillowy.
