The air fryer doesn't magically fix physics, and I won't tell you these come out exactly like a fryer's. But two whole-food moves get you genuinely close: a soak to pull out surface starch, and a light dusting of cornstarch to build a thin shell that shatters. Beyond that it's just oil, salt, and a little smoke from the paprika — a side made of food you can name, which is the whole point around here. The non-negotiable rule is space. Pile them deep and they steam each other into mush; give them a single roomy layer and they brown.

- 1 tbspcornstarch — or arrowroot
- 1.5 tbspolive oil
- 3/4 tspfine sea salt
- 1/2 tspsmoked paprika
- 1/4 tspgarlic powder

Cut the sweet potatoes into even quarter-inch sticks. Soak them in cold water for 15 minutes if you have time, then drain and dry them very well — pulling out surface starch is the secret to fries that crisp instead of steam.

Toss the dried sticks with the cornstarch first, then the oil, paprika, garlic powder, and salt. The cornstarch is what gives you a crackly shell over a soft center.

Air fry at 380°F for 18 minutes, shaking the basket two or three times, until the edges are browned and crisp. Work in batches so they're never piled deep — crowding is the only real enemy here.
