Let's deal with the obvious question first: why roast a whole chicken in an air fryer when the oven exists? Speed, mostly — an hour instead of ninety minutes, no preheating a metal box the size of a dishwasher in July — and skin. A convection fan this close to the bird crisps the surface the way rotisserie air does, which is why the result tastes closer to the supermarket spinner than to Sunday oven roast. The tradeoff is real too: you're cooking blind in a drawer, flipping a slippery two-kilo bird halfway, and a bird over four pounds simply will not fit. This is a recipe where reading the headnotes matters.

Weigh your chicken before you commit. In our Cosori 5.8-quart, a 3.5-pounder sits comfortably; a 4-pounder touches the element and scorches at the crown. The fix is spatchcocking — cut out the backbone, flatten the bird — which sounds like knife-skills homework but is genuinely one cut and a shove. Flat birds also solve the eternal problem of breast finishing before thigh, because everything faces the heat at the same distance. If your butcher will do it, let them.

Starting breast-down is the other move worth defending. The first thirty minutes render fat down over the delicate breast meat while the sturdy back takes the direct heat. When you flip, the breast emerges pale and protected, then spends the back half of the cook browning. Do the reverse and you'll eat handsome, dry chicken.

Two temperatures, not one: 160°F in the breast, 175°F minimum in the thigh, checked with a real thermometer rather than wishful jiggling. And don't discard what collects in the drawer. That's schmaltz and jus, the most flavorful tablespoons in the whole enterprise — spoon it over the carved meat or tomorrow's rice and understand why your grandmother saved it in a jar.

  • 1½ tspsmoked paprika
  • 1 tspgarlic powder

  • ½ tspdried thyme

Method

    Pat the bird dry inside and out. If it sits proud of the basket rim, spatchcock it: cut out the backbone with kitchen shears and press the breast flat until it cracks. Ninety seconds of work, and the bird cooks faster and more evenly anyway.

    Mix the salt, paprika, garlic powder, onion powder, thyme, and pepper. Rub the chicken with olive oil, then the spice mix — over the skin, under the skin where it lifts, and inside the cavity.

    Place BREAST-SIDE DOWN in the basket. Air fry at 360°F for 30 minutes. Starting upside down lets the fat baste the breast during the first half.

    Flip breast-side up with tongs and a spatula (it will want to slip — go slow). Cook another 25-30 minutes, until the skin is deep bronze, the breast reads 160°F, and the thigh reads at least 175°F.

    Rest 10 minutes on a board — the breast carries over to 165°F while the juices settle. Carve, squeeze the lemon over, and pour the drawer drippings on top like the gravy they nearly are.
