Ask a Venezuelan and a Colombian who owns the arepa and you'll get the most cheerful argument in Latin America. The truth is older than the border: people in that corner of South America were grinding maize and griddling corn cakes centuries before the Spanish showed up, and both food cultures grew straight out of that. Venezuela splits its arepas open and stuffs them like pockets; Colombia leans toward cheese worked into the dough, eaten alongside breakfast. This recipe borrows from both, because we're not picking a side in someone else's family argument.
One thing worth saying clearly, because it matters to a lot of our readers: arepas are naturally gluten-free. Masarepa — the precooked corn meal they're made from — is just corn. No wheat anywhere in the building. If you cook for someone who's celiac, this is real bread-adjacent comfort food with zero workarounds, which is rarer than it should be. Just don't substitute masa harina (nixtamalized, different flavor) or regular cornmeal (won't hydrate); the P.A.N. bag with the lady on it is the one you want.
The traditional method is a budare or skillet, sometimes finished in an oven, and plancha-cooked arepas do get a particular even, toasted crust from the hot metal. The air fryer's crust is a little more freckled than uniform — but the trade runs in your favor on texture: the circulating heat dries and crisps the shell while the inside stays steamy and tender, and there's no babysitting a pan through two batches. For a weeknight cheese arepa, we genuinely prefer it.
Eat them hot. An arepa's window of perfection is about ten minutes long, and an air fryer's whole personality is hitting that window on demand.

Ingredients
- 2 cupsmasarepa — precooked white corn meal like P.A.N. — not masa harina, not cornmeal
- 2½ cupswarm water
- 1 tspfine sea salt
- 1½ cupsshredded mozzarella — or queso llanero / queso de mano if your grocer has it
- 1 tbspneutral oil — for brushing

Stir the salt into the warm water, then gradually work in the masarepa with your hand. Knead for 2 minutes into a smooth, soft dough — it should feel like playdough and not crack when you press it. Rest it, covered, for 5 minutes; the corn keeps drinking.

Work 1 cup of the cheese into the dough. Divide into 8 balls, then pat each into a disc about a half-inch thick, smoothing any cracked edges with a wet finger.

Press a dimple into the center of half the discs, tuck in a pinch of the remaining cheese, and sandwich with a second disc, sealing the seam — or keep it simple and leave them as single cheese-flecked cakes, Colombian style.

Brush both sides with oil. Air fry at 370°F for 18 minutes, flipping halfway, until the crust is golden with toasted freckles and the arepa sounds hollow when you tap it.
