There is no Venezuelan party without tequeños. This isn't hyperbole — it's closer to constitutional law. Birthdays, weddings, funerals, election nights: someone arrives with a tray of golden, dough-wrapped cheese sticks, and they're gone before the second round of drinks. The name comes from Los Teques, a city outside Caracas where the snack took shape in the early twentieth century, and the diaspora has since carried them to every city Venezuelans have landed in, which lately is most of them.
The construction is the charm: a firm, salty white cheese — queso blanco, queso de freír, the kind that softens and stretches but doesn't vanish into a puddle — wrapped in a thin ribbon of dough, spiraled like a barber's pole. Fried, the dough blisters and crisps while the cheese inside turns molten. The first bite stretches. That stretch is the whole show.
Air-frying tequeños costs you a little of the deep-fry's uniform golden shell — the spiral ridges brown more than the valleys, and the dough is a touch more bready than bubbled. What you keep is the crisp, the stretch, and your evening: no pot of oil, no splatter, no frying in shifts while your guests eat without you. We tested them side by side and the air-fried tray emptied at exactly the same alarming speed. Seal the ends like you mean it — the air fryer forgives many sins, but a leaky tequeño surrenders its cheese to the basket floor.
If you've got kids around, put them on rolling duty; the spiral is a genuinely satisfying trick to learn, and a crooked tequeño fries up just as golden. Freeze a double batch and you're eleven minutes from party food, forever.

Ingredients
- 2 cupsall-purpose flour — plus more for rolling
- 1 tspsugar
- ½ tspfine sea salt
- 4 tbspunsalted butter — cold, cubed
- ½ cupwarm water — plus a splash as needed
- 12 ozqueso blanco or queso de freír — a firm, salty white cheese that softens without fully melting away
- 1 tbspneutral oil — for brushing

Rub the butter into the flour, sugar, and salt until sandy, then knead in the warm water to make a smooth, elastic dough. Rest it, covered, for 20 minutes — relaxed dough rolls thin without fighting back.

Cut the cheese into batons about 3 inches long and a half-inch thick. Pat them dry; a damp surface makes the dough slip.

Roll the dough out thin — about an eighth of an inch — and cut it into long ribbons roughly an inch wide. Wrap each cheese baton in a spiral, overlapping each turn slightly so there are no gaps, and pinch both ends firmly shut. Gaps and loose ends are how cheese escapes.

Brush the tequeños lightly with oil. Arrange in a single layer with space between them and air fry at 360°F for 10 minutes per batch, turning once, until golden brown and blistered at the seams.

Rest 2 minutes — molten cheese shows no mercy — and serve hot, with guasacaca or nothing at all. Uncooked tequeños freeze beautifully; air fry from frozen, adding 3 minutes.
