A great crab cake is mostly crab — that's the entire secret, and it's why the good ones fall apart in a skillet. The more crab and less filler you use, the more fragile the cake, and the more likely the flip shatters it into expensive rubble in a pool of hot oil. The honest fix is Dijon, Old Bay, lemon zest, and a few dashes of hot sauce, which together cover the same savory-tangy ground. Side by side, we couldn't call the difference meaningful. If fish isn't a concern at your table, add a teaspoon and light a candle for tradition.
The chill is not optional. Thirty minutes uncovered in the fridge dries the surface and sets the mayonnaise-egg bind, and it's the difference between cakes and crab scramble. Same goes for draining the crab hard before it goes in the bowl — canned and pasteurized lump meat carries a surprising amount of water, and water is the enemy of both binding and browning.
Buy the best crab the budget allows and taste it before you mix: jumbo lump for special occasions, backfin for weeknights, claw if you like a stronger, sweeter funk. What you're paying for is texture, and this recipe is built to protect it.

- 1 lblump crab meat — picked over for shell, drained well

- 1 tsplemon zest — plus wedges to serve
- 2scallions — finely minced
- ¾ cuppanko breadcrumbs — divided
- 1 tbspolive oil — for the coating crumbs

Whisk the mayonnaise, egg, Dijon, Old Bay, lemon zest, scallions, and hot sauce in a large bowl. Fold in the crab and 1/4 cup of the panko with a light hand — you're binding lumps, not making paste.

Shape into 8 cakes about 1 inch thick and chill them for 30 minutes, uncovered. Cold, dry cakes hold together in the fan; warm, wet ones don't.

Toss the remaining 1/2 cup panko with the olive oil and press it gently onto the top and sides of each cake. Oiled crumbs are what turn golden; dry ones stay beige.
